  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 2 tablespoons poppy seeds
  • 1 cup cottage cheese
  • ¼ cup honey or maple syrup
  • 2 large eggs
  • ¼ cup melted butter or coconut oil
  • ¼ cup fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 375°F (190°C) and prepare a muffin tin with liners or grease.
  • Mix dry ingredients in a large bowl.
  • Whisk wet ingredients in a separate bowl until smooth.
  • Combine mixtures, stirring gently until just incorporated.
  • Fill muffin cups about two-thirds full.
  • Bake for 16-18 minutes until golden and a toothpick comes out clean.
